Adding whole spices to hot oil or fat is called tempering, or blooming. Learn how you can intensify the flavor of foods such as roasted and boiled lentils.
Tempered spices are often used in dishes throughout South Asia. Applying heat to whole spices and combining them with other aromatics like chopped onions can add texture and aroma to your dish.
Learn the science behind cooking. We’re focusing on the basics, from eggs to salad dressings to grilled cheese, to encourage you to see your kitchen as your lab for experimentation.
